The restaurant idea of Paolo Sanvito, Chef-Patron of Il Lughino, was born from deep personal sensitivity and matured over time through experiences, studies, experimentation, and travels in search of artisans and small organic producers.
The first home of Il Lughino was in Seregno. In 2014, in this intimate setting, Paolo began shaping his personal vision of cuisine: entirely plant-based, rooted in Italian tradition, and carefully focused on the quality of ingredients. During this phase, the foundations of the restaurant as it is known today took form: an evolving menu, organic raw materials, direct relationships with producers, and a service that is attentive, discreet, and detail-oriented.
A few years later, the project found a new expression in Como, where Il Lughino opened in the heart of the city, in the elegant and lively pedestrian area just a short walk from the lake. It is a setting that perfectly reflects Paolo’s philosophy: quiet streets, historic buildings, and people who enjoy taking the time to choose what they eat.
Here the restaurant became a reference point for those seeking refined plant-based cuisine, not tourist-oriented, but deeply Italian in spirit, in a warm and welcoming environment. Its central location and proximity to the lake make Il Lughino a natural place to stop and return to, both for locals and for visitors discovering the city.
The next step was Milan, where Paolo decided to bring Il Lughino to one of the city’s most beautiful and renowned districts: Brera. In this historic and artistic neighborhood, the restaurant offers its vision of natural cuisine as a different kind of breath, more intimate and mindful. The Milan opening, in the spring of 2024, represents the natural extension of a story that began on a small scale and grew while remaining faithful to itself. Here too, the tone remains the same: ingredients chosen one by one, rigorous quality, craftsmanship and freshness, and a service that is attentive and kind.
Today Il Lughino lives between Como and Milan as a coherent project, grown step by step alongside its founder. Each location carries something unique from its own surroundings, yet both share the same guiding thread: a natural, artisanal cuisine attentive to health and the environment, and an atmosphere that reflects Paolo’s character, gentle, calm, and respectful. A story that continues to evolve, faithful to the idea that food can first and foremost be a way to take care of ourselves and of others.
